Espumilla (Ecuadorian Meringue Cream Dessert)
Espumilla is a meringue cream dessert that looks like ice cream and is often sold as street food in Ecuador. This perfect summer dessert is flavored with fruit and simple to make.

Ingredients
- 3 large egg whites*
- 1 cup sugar
- 1 guava fruit (1/4 cup pulp)
- 2 passion fruits (2 to 3 tablespoons pulp)
- 12 ice cream cones
- Sprinkles (for topping)
Instructions
For the guava pulp
If the guava is firm, cut it up and microwave it for 40 seconds. Press the fruit through a strainer to remove the seeds and the peel. Reserve pulp (1/4 cup).
For the passion fruit pulp
Remove the pulp from the fruit and microwave it for 40 seconds. Press through a strainer to remove the seeds. Reserve pulp (you will get 3 to 4 tablespoons depending on the size of the fruit).*
For the meringue
Whisk egg whites and sugar with an electric mixer until it looks smooth and glossy.
Transfer half of the meringue to a separate bowl. Add guava pulp to one half and passion fruit pulp to the other half.
Whip each meringue on high until it reaches stiff peaks and the sugar dissolves, about 5 to 7 minutes.
Serve espumillas in ice cream cones and add sprinkles to top. (Espumilla should hold its shape for up to 4 hours.)
