Champorado (Filipino Chocolate Rice Pudding)
Champorado is a Filipino chocolate rice pudding (or porridge) that is a popular breakfast treat. It’s easy to make, rich, and comforting.

Ingredients
- 2 cups water
- 1/2 cup glutinous rice
- 1/4 cup unsweetened cocoa powder (or 2 tablea, if available)
- 1/4 cup sugar
Instructions
- In a medium saucepan, bring the water to a boil. Remove 1/2 cup of the hot water to a bowl. Add the rice to the remaining 1 1/2 cups water in the pot. Bring the water back to a boil and reduce the heat to a simmer.
- Meanwhile, add the cocoa powder or chopped tablea to the hot water in the bowl. Mix to dissolve/melt and form a smooth paste. Add the mixture to the rice as it is cooking and mix through.
- Continue to cook the rice, uncovered, at a steady simmer, stirring now and then, until the rice is just about cooked through - it should take around 12-18 minutes from when the rice came to a boil.*
- Add in the sugar and mix to dissolve. Continue to cook for another 5 minutes to thicken the pudding slightly. Remove from the heat and serve. (Bear in mind that the pudding will continue to thicken a little off the heat, so you don't want it too thick when you remove it from the heat.)
