Chipa Guasu (Paraguayan Cornbread Pudding)

Ingredients
- 1 onion, sliced
- 1/2 cup vegetable oil or lard
- 4 eggs
- 5 cups fresh corn
- 2 teaspoon salt*
- 1 1/2 cups whole milk
- 2 cups fresh cheese (queso Paraguay or queso fresco), in chunks*
Instructions
- Preheat the oven to 390F. Grease a 2 1/2 quart pan.
- In a small frying pan, sauté onion in oil for about 8 minutes. To a blender cup add: eggs, corn, salt, milk, and onion/oil.** Blend until creamy.
- Pour batter into the prepared pan. Add 1 cup of cheese, and mix into the batter with a knife or chopstick. Top with more cheese.
- Bake for 30 to 35 minutes or until golden brown and firm to the touch.
